i must also include my most favorite ever pumpkin bread recipe:
1 cup oil or butter
3 cups sugar
3 eggs
1 t. vanilla
1/2 t. salt
1/2 t. soda
1 t. cinnamon
1 t. baking powder
1/2 t. all spice
1/2 t. nutmeg
1/2 t. ground cloves
1/2 t. ginger
3 cups flour
2 cups pumpkin
1 cup nuts
mix oil, sugar, eggs, vanilla, pumpkin. in another bowl sift everything else except nuts. mix all together and add nuts. pour into greased or pam'd bread or muffin pans and bake at 350 degrees for an hour... or so! i'm usually more generous with some of the spices and vanilla!
